Seriously delicious

With all the get-togethers over the holidays, you're always in need of a yummy recipe. This is the BEST, no really, it is. I can say that because it's not my recipe (got it off tv a couple years ago). This is perfect as an appetizer or to just leave on the counter for snacking when you have company over. When I found the recipe, I believe it was called cranberry salsa, but it doesn't look like salsa and I didn't like it with tortilla chips (like they served it). I aptly renamed it, "Christmas Caviar." Well, because it looks like caviar and you can only make this during the holidays. (fresh cranberries are only available this time of year) I really hope that someone out there gives this a try and lets me know what they think....you will not be disappointed! Serving it w/ cream cheese and crackers is best, but it really makes a great cranberry sauce for turkey, too. I've included a photo...sorry, not the best picture, but it will give you the idea. Enjoy!

Christmas Caviar

12oz pkg fresh cranberries
¾ c sugar
1 med jalapeno, remove seeds
1 green onion
2T fresh cilantro (I always add more)
1tsp dried cilantro
1/4tsp cumin

Blend all ingredients in a food processor. Chill overnight (this is a must…the sugar must sweeten it). Best served with crackers and cream cheese. Also good with tortilla chips, beef, pork, turkey or chicken.

Someone lost their first tooth!

Congratulations Sarah! She has now been visited by the tooth fairy. I am playing catch up a bit...she actually lost her tooth on 12/3. In the picture, it's hard to tell that she even lost a tooth. The new tooth is stealing her opportunity for an empty grin. For the record, she was more brave than her older brothers when it came to pulling it out. (sorry I called you out boys!) She let mom yank it right out with hardly a flinch!

Early Christmas

Grammy and Papa are heading to California next week for Christmas, so we got to celebrate with them tonight! Each year, the kids look forward to decorating a gingerbread house with grammy. This year was no different...it turned out just as creative and messy as always. Such a fun tradition! Grammy and Papa also came bearing gifts tonight. Webkins, books, jerseys, a doll, a bike and Pixel Chix were among the gifts. (and a Costco membership for Chad and I....looks like I'm in trouble!). Thank you so much Grammy and Papa...we had a wonderful time with you tonight. We love you and appreciate all you do for us.

The "gig" is up....Part 2

So, I mentioned I was feeling a little sentimental about Josh's newly attainted knowledge. Well, there's more. The other night he lost another tooth. Just before bed he asked me if he should put it under his pillow. Surprised, I looked at him in disbelief and said, "are you serious?" He said, "well, I don't know...what do you mean?" I chuckled and handed him a dollar. A few minutes later he came back into the room. I could tell he had been crying. I felt so bad. I feel like I've slammed the door on his childhood. Josh is a super smart kid, but apparently more innocent and tender than I thought. I told him it was okay to be sad and that the fun wouldn't stop. We just hugged and cried together in the kitchen. It really was a special moment...you just don't get to hold and hug your kids like you did when they were younger, you know what I mean? I think he felt a little better when I asked him to stay up with me (Chad is out of town as usual) and watch tv and eat chips and salsa. Man, I love that kid.

So, the "gig" is up...

I'm talking about Josh and the current holiday season. Yep, we figured since he was now in YM's he should be fully informed. I think he was really just hanging on to please us anyway. We talked about informing him and I was kinda looking forward to it...you know, letting him be a little helper and all. So, yesterday was the day. Dad and Josh had some special time together. When Chad told me they'd had the talk, I didn't quite expect the feelings I had. I almost started to cry. Don't get me wrong, it was time and he basically knew anyway. But, somehow, it really made me sad. Like the end-of-childhood kind of sad. I guess with all the growing up he's been doing since he turned 12, I've been rather sentimental.

Christmas Recital

Josh and Andrew had their Christmas recital on Saturday. They both did a wonderful job. Andrew played "Spirits Everywhere" and "Joy to the World." Josh played "Chip of the ol'Bach" and "Ukranian Bell Carol." It has been really fun to see them progress...I love hearing them work on the dynamics of their music. Great job, boys!

1st Class Scout

Congratulations to Josh for earning his 1st and 2nd class ranking in scouts. He recieved his awards last night. Thank heavens we have some great scout leaders in our ward because I am clueless and Chad and I aren't exactly the outdoorsy type. He even earned his first merit badge last night, too...man, before you know it we'll be working on his Eagle project!

Putting away the drill after 36 years!

I can hardly believe it's already time for my dad to retire. It has been very interesting to reflect on how he must be feeling upon retiring after 36yrs of dentistry. Last night we celebrated all his years of work. The party could not have turned out better (a big thanks to Dan and JaNel who made it happen as well as everyone else who pitched in). It really was a wonderful night. I could tell my dad was really pleased and really appreciated all the love and gratitude that was expressed to him. The room looked great: beautiful flowers (Heidi!), great sign (Shawn!), great pictures (JaNel had some pics of my dad blown up...so cool!), great food....everything looked so nice. JaNel even ordered a "denture" cake (so funny!) and these great little cookies that had my dad's logo on them. It was fun to see my dad's siblings together (we missed having Gary there) and seeing so many other friends, family and patients. Josh read a poem (thanksHeather) and the g'kids each shared what they were looking forward to doing with Papa w/ his extra time. Ryan gave a hilarious roast...loved it! What a great night indeed!

Two cherished childhood memories...

Clytie Adams and the Nutcracker.

A couple weeks ago, my mom, Sarah and I had the opportunity to go see Clytie's production of The Nutcracker (thank you for the tickets, Tricia!). It is such a delight to share this experience with Sarah. Of course, Sarah just loved the special Sugar Plum doll G'ma Chris gave her!

The reason Clytie and the Nutcracker are so special to me are: 1) I spent many years taking ballet classes from Clytie. She is a wonderful teacher and she is part of my childhood. I have many memories of the alley, the studio, and the recitals. It was such a treat to see her in the lobby and snap a picture with her. Can I just say how good she looked? She is ageless! 2) The Nutcracker is also special to me because of the opportunity I had to be a part of Ballet West's production for about 5 yrs. Such an overwhelming experience for someone who dreamed of becoming a ballerina. I remember so many details about Capitol Theater, the dancers, the costumes, the rehearsals. Such cherished memories! I can instantly recall thoughts and feelings I had about my experiences with Clytie as well as the Nutcracker....such a big part of growing up for me. At times, stressful feelings, but lots of great feelings of big dreams of becoming a ballerina!

"Mom, I don't ever want anyone in our family to die.

Especially me. I just love life so much."

I asked what it was about life she loved so much.

She answered, "It's just so care-full...

there's just so much I care about."

A Day of Thanksgiving...

Isn't Thanksgiving a wonderful holiday? I love it. All you have to think about is food and gratitude...does it get any better than that? This year we headed up to Heather and Ron's house for breakfast. On the menu? Ron's speciality: Chocolate Chip Pumpkin Pancakes with whipped cream. Delicious! Thank you to Ron and Heather for hosting breakfast. After that, we headed over to my mom and dad's house.


The guys...and aunt Megan held a little "Turkey Bowl" in the backyard. A little chilly, but a beautiful day.
There is always a big crowd at my parents house...always room for more. This year, Chad's parents and Ron's friend joined us. It was wonderful to have them there. Before dinner started, my mom and dad shared some thoughts. Then, at Ron's suggestion, we all took turns going around the room sharing what we are grateful for. It was such a special opportunity to hear my family members vocalize their love and gratitude for the blessings we all enjoy. Most of the men didn't make it through without a few tears! This is what I shared: I am so grateful for my children. It is amazing to watch them learn and grow...to see the seeds of testimony being planted in each of them. With that being said, I am so grateful for bedtime! lol When Chad is home (which isn't that often lately), it's our favorite time. There is not much I enjoy more than sitting on the couch with Chad. Just the two of us...snacking....chatting...watching tv...alone...quiet! I love being with Chad. Any chance I can get....it's just great to be together! I am also grateful for temples. Last week I had the opportunity to go to the temple and recieve immediate and direct inspiration and comfort. I am so grateful that I live so close...close enough to leave Jenna at a babysitters and go while the kids are at school. I am even more amazed that I will soon have a temple even closer in the near future. What a blessing.

Celebrating 65 Years!

This last weekend, the Medeiros family celebrated the 65th wedding anniversary of Pat and Ginger. Wow...now, that's worth celebrating! Rick had arranged for all the kids to surprise them at "The Roof" restaurant at the Joseph Smith building. (gorgeous roof-top view of the temple and downtown SLC...and a yummy buffet) It was so fun to surprise them as they got off the elevator. Unfortunately, G'pa felt too sick at dinner and had to leave early. He didn't feel well all weekend, but put on a brave face for the rest of us. We really had a great time hanging out all weekend. This was the first time Marc had ever been to our home. We absolutely loved having him here and can't wait for him to visit again. It was so fun to visit with Tammi about her new home and to talk home decor with her! On Sunday, everyone came to church with us. They got to see all of us "perform" in some way or another...it was the primary program, Chad was conducting, Josh passed the sacrament and I taught the relief society lesson. Sunday night, G'pa felt especially sick. He spent tues-wed in the hospital. He was diagnosed with pneumonia and it was determined he had likely suffered a mild heart attack sunday night. Although he wasn't feeling well all weekend, it was sure special to have the Medeiros family together...great time...great memories! G'pa we love you and hope you feel better soon!

6 Things About Me...

I've been tagged by Pam Harp (see side bar...I'm not smart enough to make her name into blog link!). I get to share six things about me that you may not know.
1. I do not like unloading the dishwasher. Loading is fine (which has to be loaded a certain way!).
2. I hang all my clothes in rainbow order on matching hangers.
3. I wish I could be an interior designer, graphic designer and a photographer. I love doing anything creative. I just started teaching art classes at school...love it!
4. I cannot sing, but I am part of the ward choir...just a warm body up there, really.
5. I can now run a full mile without stopping...I am not a runner so this is an accomplishment for me! Chad and I also did two 5K's this summer.
6. I currently serve as a teacher for Relief Society...I think this is my favorite church calling I've ever had (but I've said that before). I seriously look forward to my lessons and feel like I learn so much each time I teach!

No words really....

...just something for your viewing pleasure, I present the many talents of our sweet daughter, Jenna. She has a thing for make-up, lotion, lip gloss...anything that can make a mess, really. She is very skilled in carrying a chair to her chosen spot to reach her treasure. I often find her in a daze, laying in front of the tv applying lotion or make-up to her face. She has spilled shampoo on the carpet...three times. Oh yes, and there was the Comet, too. Both of these were rather enjoyable to clean up. She even enjoys developing her artist talents by coloring all over herself. If only she weren't so darn cute. Good times at the Medeiros home...good times.

Halloween wrap up...

Just a quick overview of all our Halloween festivities. The kids enjoyed a costume parade and class parties at school (something that is not always done anymore!) Mom got to help out with Andrew's party. That night, Grammy and Papa Rick came over to decorate the traditional graveyard cake...lots of fun...the cake was buried in decorations! Saturday, we went to a neighborhood party at the Wade's house. To say they are into Halloween is an understatement. They have a full size coffin in their lv room and a graveyard in their front yard! We had a great time...Chad and I won for funniest costumes! (Chad went as a tattooed rock star and I was some sort of witch). Monday night, we had a traditional Halloween FHE at G'ma Chris and Papa Bruce's house. Lots of fun...the highlight had to be the doughnut eating contest. We had doughnuts hanging from strings and the kids had to eat them with their hands behind their backs.

Halloween night, we finally got our pumpkins carved. Mom did the good ol'Papa Murphy's pumpkin-shaped pizza with the witches brew rootbeer.

I think the was one of the first years I dressed up (thanks to Chad's mom and Mary for loaning me bits and pieces!). I got to go trick or treating w/ the kids, too (Chad usually goes). By far the best part was watching Jenna. She had a ball...absolutely loved...was so into it! She wanted nothing to do with the stroller. She was running door to door right along the big kids. It was so fun to see her "get it!"

A special day for Josh

This last Sunday, Josh was ordained a deacon by his dad. What a beautiful blessing it was. I could truly hear the Spirit speaking through Chad. So much beautiful counsel was given. It really was special. My mom, Chad's parents, Morgan, Megan and Cameron were present. We all had our eyes glued to Josh as he passed the sacrament for the first time. He was so nervous and has been asking me how he will know what to do for about a month now! His fellow quorum members taught him and he did a great job. It was so cute to watch him...he was so respectful and serious. He was definitely they new kid...all the other boys were at least a head taller than him. I'm sure he'll catch up soon!

Andrew's 1st Pinewood Derby

Andrew had his first Pinewood Derby last week. He was very excited but, also very nervous. He really wanted his car do to well. And it did! His car was one of the top finishers in his pack. His car was also voted "most unique." Brother Young helped him cut out his car and his dad helped him paint. I think all in all he had a great time.

Praying for little Kamberlie and the Binks family

Two weeks ago, a little girl, Kamberlie Binks went missing at Lake Powell. My kids were very upset. As we were discussing things at family prayer on night, we had a discussion on prayers as well as bad things that often happen. I tried my best to teach them that our prayers aren't always answered how and when we think they should be. (Sarah was upset because she had, "prayed for the miners but, they never found them.") The kid's anxiety was building at the thought of scary things happening like injury, separation and especially death. I did my best to assure them that while death is very sad, that we will be with that person again someday. We will miss that person terribly but, we can be reunited. It's hard to teach something that you've never experienced first hand. I only hope that efforts to empathize, love and learn from those that have and are experiencing such loss will prepare us for the day that those experiences come to us. The next Sunday was Fast Sunday. I asked Josh and Andrew what they wanted to fast for. Without hesitation, they both said, "the little girl lost at Lake Powell." Sadly, they found her body in 100ft of water, she had drowned. I suggested the boys now fast for her family. Sarah was at the counter coloring and overheard the discussion. She desperately blurted out, "What?! She died?! Every time on the news, it always happens to girls. Not another girl!" (Yes, dramatic and just how Sarah views the world) I left the room and returned only minutes later to find that Sarah had drawn a picture of her interpretation of the what happened to Kamberlie. I was stunned. I asked her to explain what she had drawn. You see little Kamberlie at the bottom of the Lake (with a frowny face) and her mom (with a snorkel) trying get to her. (fish and fish hook on the right) Notice the word bubble with the exclamation point...she's calling for help. It broke my heart. I was touched that Sarah was able to feel and express her feelings. We have been praying for the Bink's family. I can't imagine what they are feeling. I have been amazed at the faith they've shown.

Around the house...

I love trying new things when it comes to making my house my own. I love my home but, when we bought it, it was a spec. So, we didn't really get to make any choices. Not that what we have isn't nice, I would just like to make it more my own. kwim? I've been wanting to do something with my cabinets for quite awhile now. It's just that making a mistake on cabinets could be a rather costly mistake. After asking the advice of friends (thank you!) who've done similar projects I decided to take the leap. Well, a small leap at least. I wanted to start in a small area where the consequences of a mistake wouldn't be as expensive. I decided to start in the master bathroom. The cabinets are knotty alder and had a natural finish...a little more rustic than I'd like. Ideally, I'd like dark cabinets and light tile. I stripped, scrapped, cleaned, sanded, wiped, stained, wiped, poly-ed, sanded, wiped, and poly-ed. Yes, it was a lot of work! For a very non-professional, I think they turned out as good as they could. I am really happy with results. Now, onto the tile, coutners, faucets and lights in the bathroom! ;)

"Now, that's got to make you feel old"

That is what a fellow ward member whispered to me as Josh was being sustained as a deacon. Yep, Josh turned 12 (October 7). I have been anticipating this birthday for some time now; thinking how fun it would be to see Josh passing the sacrament. Somehow it never clicked that it meant he'd be going to YM's as well. Now, that I'm not ready for! Passing the sacrament, yes. Hanging out with older kids and the sudden need to feel and act older, NO!! I guess it wouldn't be right to keep him in primary would it? lol I know this is a good thing and there's not a better kid than Josh. At his interview with the Bishop, he was given a priesthood pamphlet and "For the Strength of Youth." The following Monday, I asked him to give a FHE on what he had read. He chose the section on the importance of friends. I was astonished at his natural ability to teach...he really did a fantastic job. I know it will be no time before he's teaching in the mission field and then teaching his own children! It is amazing to catch glimpses of their testimonies developing.

Slow start...

to the world of blogging. Oh well. Maybe I'll keep doing this, maybe I won't. I really wanted this to be a journal of sorts so I may do a bunch of posts at once. Stuff I don't want to forget and hopefully someday I'll get around to scrapping.
